The same philosophy guides the way we cultivate our olive groves in Istria. Production remains intentionally small-scale, with careful attention to the balance of the local ecosystem.

The demanding climate, shaped by the rocky terrain, strong winds and cold winters, naturally encourages a slower and more respectful approach to agriculture. These conditions help preserve biodiversity while limiting the need for intensive intervention.

We focus on maintaining healthy soils, protecting the longevity of our trees and harvesting with care to preserve the freshness, aroma and natural high polyphenol content of the olives.
